Urbi Pathak

Urbi is a senior research associate at Lux Research, based in Amsterdam. Her work focuses on emerging food and consumer health technologies related to functional health ingredients, microbiome modulation, cell-based meat, sugar-reduction technologies, and alternative protein, among others, aiming to uncover innovations and trends within the industry.

Before joining Lux, Urbi developed her subject-matter expertise as a food scientist at Assay Consulting and served as a hygiene auditor at Equinox Labs in India. She holds an M.Sc. in food science from ISA Lille, France, with a specialization in sustainable product development. During her end-of-studies internship at Phileo by Lesaffre, she worked on an R&D formulation project for animal feed powders, developing cross-departmental strategies and designing lab trials. During her master’s studies, she carried out several hands-on R&D and product development projects across France, addressing customer demands like taste, texture, and shelf stability. Moreover, she has contributed to projects on eco-optimization of brewing processes, developed nutraceutical products, and worked on valorizing agricultural products, like beetroot syrup. With a robust background in food science and innovation, Urbi continues to contribute to advances in the agrifood industry through her research and strategic guidance at Lux.

In her free time, she enjoys cooking, working out, dancing, and traveling.
